Recipe: muah chee with peanuts and sugar (Singaporean version of mochi)
Ingredients:
- 200gr of glutinous rice (sweet rice) powder
- (Optional) 1 tbsp of corn flour
- 350ml of water
- 1 tbsp of neutral oil - some people use shallot oil for fragrance
- 200gr of peanuts - sometimes I use walnuts, but the original recipe is peanuts
- A few pinches of salt
- A few tsp of white sugar (to taste)
Steps - for peanuts & sugar:
- Roast peanuts in a dry pan
- Rough chop in a food processor
- Add a pinch of salt, and a few teaspoons of sugar to taste. Mix well.
Steps - for mochi:
- In a bowl, add glutinous rice powder, water, a pinch of salt. Mix well to form batter.
- On a non-stick pan, add oil, then fry the batter using very low heat. Stir constantly.
- Cook for 4-5 minutes until it forms mochi texture, and the batter fully cooked (does not taste flour-y).
Steps - to serve:
- Add peanuts mixture to the pan
- Shape mochi to taste (usually similar to marbles). Coat with the peanuts mixture.
