Recipe: chawanmushi (Japanese steamed eggs)
Ingredients:
- Dashi - can be made from scratch (using kelp & katsuobushi), or using powdered Hon Dashi. I usually just use the powder.
- Eggs
- Mirin
- Sake
- Any toppings you’d like - usually shrimp, chicken, mushroom, etc
- Soy sauce - optional
- Chili powder - optional
- Furikake - optional
Steps:
- Mix eggs with dashi - ratio 1:1
- Add mirin and sake to the mixture
- Add toppings
- Wrap bowl in aluminium foil, steam for 20 minutes
- Serve with soy sauce, chili powder, and furikake
